Welcome Scott. It's great to have another Illinois reenactor on board.
Scott, Elaine and I call the dance at Minooka, but we'll be around after that is over. I buy the ox rib sets from bonedrymusic.com. I order the high end whole ox ribs when he has them in stock, and then cut them down and finish them myself.
